Homemade Cosmic Brownies

Little Debbie Cosmic Brownies are hands down the best snack the company sells. Don't take my word for it, the whole reason I developed this recipe was because it won our Snack Cake Instagram Tournament in April 2021 (see below). It fought it's way through Swiss Rolls, CupCakes, Honey Buns, and Oatmeal Creme Pies to be voted the #1 best snack cake by my followers. To celebrate my favorite's victory, I spent about 2 weeks working on this recipe to get it just right. While it's not identical to Cosmic Brownies, it's pretty dang close.


Ingredients:

6 Tbs Butter, melted

3/4 C + 1 Tbs Brown Sugar

1 tsp Vanilla Extract

1 Egg + 1 Yolk

1 tsp Salt

1/4 C Cocoa Powder

1/2 C Flour


1 Tbs White Sugar

1/4 C Heavy Cream

1 C Milk Chocolate Chips


1/4 C Candy Coated Chocolate Sprinkles


Instructions:

  1. Preheat the oven to 350°F.

  2. Beat the Butter and Brown Sugar together in a medium bowl until fluffy, then mix in the Vanilla, Egg, and Egg Yolk.

  3. Once fully combined, mix in the Salt, Flour, and Cocoa Powder.

  4. Pour the mixture into a parchment lined 8x8 pan and smooth into an even layer.

  5. Bake for 16 minutes. Set aside and let cool to room temperature.

  6. While the brownies are cooling, prepare the ganache icing.

  7. Put the Sugar and Heavy Cream in a microwave safe bowl and microwave to scalding, about 45-60 seconds.

  8. Add the Milk Chocolate Chips to the hot heavy cream, let sit for a few minutes, then stir well until the chocolate chips have fully melted and the mixture is homogenous.

  9. Pour the ganache over the cooled brownies, sprinkle with the Candy Coated Chocolate Sprinkles, and let sit until the ganache has fully set, at least 2 hours.

  10. Once set, remove from the pan, slice off ends to make a perfect square, cut into rectangles (I get around 6, but to match the size of OG Cosmic Brownies you will get 4 with a lot of scraps) and serve!
